At four in the morning, Chinook Salmon are being glazed with a mixture of fructose and seawater.  Double dipping whole salmon in a super cooled glazing solution builds up a 1/8″ protective barrier of ice.  This glazing of ice, in turn protects the salmon from sublimation and freezer burn.  The process is both time consuming and costly, but yields a high quality, sushi grade of salmon.  Beware young man, the salmon dungeons of Southeast Alaska.
